The House of J.C. Le Roux The House of J.C. Le Roux, the first cellar dedicated entirely to the craft of making sparkling wine in South Africa is located in the heart of the picturesque Devon Valley on the outskirts of Stellenbosch. The cellar is the country’s leading sparkling wine producer and is recognised for its craftsmanship and expertise to make the finest Méthode Cap Classiques. These premier vintage Cap Classiques are created in the state-of-the-art cellar in the time-honoured French method of secondary bottle fermentation, known as Méthode Champenoise.
The winemaking The House of J.C. Le Roux was the first South African cellar to produce an off-dry Cap Classique, J.C. Le Roux La Vallée. This off-dry Cap Classique is a fresher and lighter style of MCC and will be enjoyed by people with a drier palate as well as those enjoying a slightly sweeter taste. La Vallée was produced from predominantly Pinot noir grapes and matured for 12 months on the lees before degorgement.
Winemaker’s comments: Elunda Basson This is a refreshing Cap Classique that suits all palates and occasions. The light yellow-golden hue is well complemented by creamy buttery tones and the off-dry palate adds another dimension of complexity. The fresh and fruity style of the wine brings out the lightness of this MCC with hints of pears and litchis.
